**Preparing Moroccan Sfa**
Moroccan Sfa is a delightful dish known for its rich flavor and appealing texture. To prepare Sfa in a traditional way, start by heating some oil in a pot, then add the Sfa and coat it thoroughly with the oil until it is well absorbed. Next, heat water in a separate pot until it is hot, then place the Sfa in a steamer (couscousier) and allow it to steam until it is thoroughly cooked.
Once the Sfa has steamed, return it to the original pot and add two cups of water. Let it absorb the water until it is well combined. Then, place the Sfa back in the steamer and let it steam again for the second time. After that, return it to the pot, add two more cups of water, and let it absorb this water as well.
After the final steaming, return the Sfa to the steamer one last time and allow it to steam thoroughly. Once done, transfer it back to the pot, fluff it with your hands, and mix in some butter to enhance its texture. Let it steam one final time before adding powdered sugar to complete the preparation.
For an extra touch, prepare raisins by placing them in a pot with water and heating until they swell. Drain the excess water, leaving a little behind, then add sugar to taste, along with a tablespoon of cinnamon and a tablespoon of orange blossom water. Allow the mixture to thicken, then stir in a tablespoon of honey and remove from heat.
Garnish the Sfa with the prepared raisins and serve it as a delicious treat for special occasions or as a sweet and comforting dish.
